This hearty crockpot Chipotle Beef dinner is perfect for weeknight meals and can be used in tacos, taco bowls, nachos, or enchiladas. With a delicious blend of spices and a tender chuck roast, it’s a versatile dish that provides great leftovers.
Prepare the braising liquid by blending everything together.
Pat chuck roast dry, and season generously on all sides with salt, pepper, and garlic powder.
Sear in a skillet with olive oil until a crust forms on each side.
Pour some of the braising liquid on the bottom of the crockpot then lay chuck roast on top.
Pour the remaining liquid over, and add more beef broth if needed to ensure the meat is covered. Add in bay leaves.
Cover and cook on high for 4-6 hours, until meat is tender and falls apart.
Remove and shred meat. Enjoy on a bed of rice topped with black beans, pico, and avocado.
