River Potatoes are a refreshing and easy snack or side dish made by marinating baby red potatoes in pepperoncinis. The longer they sit, the better the flavor develops, perfect for BBQs or packing for a day out.
Wash the potatoes and add them to a pot.
Cover with water and bring to a boil until fork tender.
Drain the potatoes and cool them.
Cut the potatoes in halves or quarters to make them bite-sized.
Add the potatoes to a ziplock bag.
Pour the entire jar of pepperoncinis and the juice into the bag.
Seal the bag, mix well, and let sit overnight or up to three days.
