 Preheat the oven.
Begin by preparing the peppers (cut two peppers lengthwise, scoop out the seeds and any membrane). Dice the remaining green pepper.
Chop onions and garlic, set aside.
Prepare the white rice, set aside.
In a skillet, add olive oil, onions, and green pepper. Cook until softened (about 5 minutes).
Add the ground beef to the skillet, break apart, and cook until browned.
Once the meat is fully cooked, add in the garlic and stir until fragrant.
To the pan, add in half the jar of sauce along with the cooked rice. Stir until combined and set aside.
Rinse the peppers with water to remove any seeds, add to a baking dish and bake for 15 minutes until tender.
Remove from the oven, fill the pepper halves with meat and rice filling. Pour the remaining sauce over the tops and into the bottom of the dish.
Bake for 15 minutes, then remove, top with cheese, and bake until the cheese has melted and the sauce is bubbling (about 15-20 minutes).
